Today we bring you a recipe for healthy tortillas, tacos, quesadillas, enchiladas… This amazingly simple recipe incorporates spinach to the batter to provide fiber, antioxidants, vitamins, and minerals to these wraps. Are you ready to try them? You only need 5 ingredients that you probably have already at home!
These vegan high protein wraps are perfect to eat in 20 minutes, the batter only takes 5 min to make as you simply need to put all the ingredients in a food processor or mixer until smooth. For a thinner wrap add water to taste.
One of the best things about this dish is that you can easily pack the filling and the tortillas and eat them anywhere! You can fill them in with anything and everything, we recommend lentils, avocado, cucumber, tomato, corn, hummus, lettuce, scrambled eggs, mushrooms…
PERFECT FOR VEGGIE HATERS
As we mentioned in our daily health checklist challenge greens are important and we get that not everyone loves them, well this recipe helps you to incorporate spinach in your diet pretty much tasteless!
- 1 cup and 1/2 of your favorite flour.
We used :
- 1 cup or spelt flour (100g)
- 1/2 of corn flour (60g)
- 60 grams of spinach
- 250 ml of water
- 1/3· tbsp salt (to taste)
EASY TO SWAP INGREDIENTS
While this recipe is oil-free, vegan, rich in protein it’s very easy to make it your own way. If you want to make this recipe corn free, wheat/gluten free, grain free or salt-free, is very easy to exchange some ingredients for other alternatives.
Gluten and Corn Free flour alternatives:
Chickpea flour, Rice flour, Buckwheat flour, Amaranth Flour, Barley Flour, Coconut flour, Tapioca flour, Almond flour, Oat flour, Quinoa flour…
